🍋 Lemon Rice 🍋
A tangy, comforting South Indian classic that’s perfect for any meal!
Ingredients
🍚 Rice – 1½ cups
💧 Water – 3 cups
🛢️ Oil – 4 tbsp (2 for tadka + 2 for mixing)
🥜 Peanuts – A handful
🌰 Cashews – A handful
🌱 Mustard Seeds – 1 tsp
🌶️ Dry Red Chilies – 2
🌶️ Green Chilies – 3 (slit)
🫚 Ginger – 1-inch piece (sliced into 2 small pieces)
🍋 Lemon Juice – From 2 lemons
🌕 Turmeric Powder – ¼ tsp
🧂 Salt – To taste
🍃 Curry Leaves – Optional (but highly recommended!)
Instructions
1️⃣ Cook the Rice
In an Instant Pot, cook 1½ cups rice with 3 cups water.
Release pressure immediately after cooking to keep rice fluffy (not sticky).
2️⃣ Prepare the Tadka (Tempering)
Heat 2 tbsp oil in a pan.
Add peanuts and cashews; roast until lightly golden.
Add mustard seeds, dry red chilies, and let them splutter.
Add slit green chilies and ginger slices.
Sprinkle turmeric powder and turn off the heat.
Let the tadka cool slightly.
3️⃣ Mix Everything
Add hot cooked rice to the tadka.
Drizzle 2 tbsp oil on top for a non-sticky texture.
Add salt and lemon juice; mix well.
Toss in curry leaves if available.
✅ Serve hot or cold – both taste amazing!
