Corn Pakoda Pav Recipe

Ingredients:
For Corn Pakoda:
Corn niblets (sweet corn kernels) – 3 cups
Ghee – 1½ tablespoons
Asafoetida (heeng) – ½ teaspoon
Mustard seeds – 2 teaspoons
Cumin seeds – 1 teaspoon
Curry leaves – a handful (optional)
Ginger – 2 teaspoons, chopped
Green chilies – 2, chopped
Turmeric powder – ½ teaspoon
Chili powder – 1 teaspoon
Salt – to taste
Milk – ½ cup
Oil – for deep frying
For Batter:
Gram flour (besan) – 1 cup
Salt – to taste
Chili powder – 1 teaspoon
Turmeric powder – ½ teaspoon
Kasoori methi powder – ½ teaspoon
Coriander leaves – a handful, chopped
Water – approximately ¾ cup
For Pav Assembly:
Pav buns – as needed
Butter – for spreading
Thick coriander chutney – as needed
Garlic chutney – as needed
Onion roundels – as required
Tomato slices – as required
Fried green chilies – optional
Chaat masala – for sprinkling
Garlic Chutney Ingredients:
Oil – 2 teaspoons
Garlic cloves – 10-12 pieces
Peanuts – 2 tablespoons
Sesame seeds – 1 tablespoon
Red chili powder – 1½ teaspoons
Coriander powder – 1 teaspoon
Salt – to taste
Dried coconut – 2 tablespoons, grated
Instructions:
Corn Pakoda:
Pulse corn kernels in Prestige Endura Pro mixer grinder without adding water, scraping down sides intermittently, until coarsely ground. Transfer to a bowl and mix in some whole kernels for crunch.
Heat ghee in Prestige frying pan, temper asafoetida and mustard seeds until they pop. Add cumin seeds, curry leaves, ginger, and green chilies. Sauté briefly.
Stir in turmeric, chili powder, and salt. Add corn mixture, sauté until fragrant and softened (about 4-5 mins).
Pour milk to achieve a creamy texture; cook until thickened. Spread on a plate and allow cooling.
Batter and Frying:
Combine gram flour, chili powder, salt, turmeric, kasoori methi, and coriander leaves. Gradually whisk in water to create a smooth batter.
Form cooled corn mixture into small balls, dip in batter, and deep fry in hot oil until golden and crisp. Drain excess oil.
Garlic Chutney:
Heat oil in a pan, lightly sauté garlic cloves until golden.
Add peanuts and toast lightly. Stir in sesame seeds, cook briefly, and remove from heat.
Mix in red chili powder, coriander powder, salt, and grated dried coconut. Stir fry for another 2 minutes.
Cool slightly, transfer to a blender, and blend into a coarse powder.
Pav Assembly:
Slit pav buns horizontally, spread butter, and thick coriander chutney.
Place corn pakoda inside the pav, sprinkle generously with garlic chutney, onion roundels, tomato slices, fried green chili, and chaat masala.
Press gently and serve immediately.
