Ingredients for 4 servings:
🔸Rice Tamaki - 200g
🔸Water for cooking rice - 200g
🔸Rice dressing - 90g
🔸Tiger shrimp - 250g
🔸Vegetable oil - 10g
🔸Lettuce - 40g
🔸Pickled radish Tamaki - 80g
🔸Curd cheese - 80g
🔸Burger sauce Tamaki - 60g
🔸Sesame seeds mixed black and white - 30g
🔸Rosemary - 1 sprig
Ingredients for rice dressing:
🔸Rice vinegar Tamaki - 90g
🔸Sugar - 40g
🔸Salt - 5g
🔸Kombu seaweed - 1 leaf
Cooking technology:
1. Combine rice vinegar, sugar, salt and kombu seaweed for the rice dressing. Stir until the sugar and salt are completely dissolved. Leave for half an hour, then remove the kombu.
2. Boil the rice in a rice cooker in a 1:1 ratio with water. Mix with the rice dressing.
3. Cut the pickled radish into thin slices.
4. Fry the peeled shrimp in a frying pan with vegetable oil for 1 minute on each side. Add a sprig of rosemary when frying.
5. Distribute the cooked rice into balls and use a deep 9 cm diameter cup to form halves of "mini-buns" from rice.
6. Put the cream cheese on one half of the rice, then the pickled radish slices, lettuce leaves and shrimp. Pour the burger sauce over the other half of the rice, spread it over the surface, cover the shrimp with a rice bun with the sauce inside. Garnish the finished rice burger with sesame seeds.
