Sancoche is a traditional dish from the the Commonwealth of Dominica (West Indies). It is made with saltfish cooked in coconut milk, with Christophene or white potatoes and in this video, I walk you through step-by-step instructions on how I make Dominican-style saltfish sancoche. Sancoche is delicious, hearty, comforting, and deeply rooted in Caribbean traditions. It can be eaten for lunch or dinner and served with ground provisions and/or white rice.
This is not Dominican Republic sancocho - this is sancochee as enjoyed in Dominica WI, passed down and made the way many of us know it at home.

Ingredients:
1 Christophene (boiled and crushed)
1 pkt. boneless Saltfish or salted pollock
Fresh herbs chopped: Parsley, Celery, Chives, Basil
Seasoning Peppers
2 Bell Peppers (use half of each one)
4-6 Crushed Garlic
Turmeric (add based on preference – a few dashes to about 1 tsp. I didn’t measure)
Curry Powder (about 4 dashes to about 1 tsp. I didn’t measure)
½ Yellow Onion
¼ Red Onions (optional)
1 tbsp. my homemade green seasoning blend (a combination of fresh herbs blended with garlic, onion). See link to the recipe above.
The Side:
Ground Provisions of your choice or rice
