Ingredients:
For the Pudding Cake:
½ cup (1 stick) Unsalted Butter, softened
1 cup Granulated Sugar (Caster Sugar)
4 large Eggs, separated (yolks and whites)
Zest of 2 Lemons
½ cup Fresh Lemon Juice
½ cup All-Purpose Flour (or Self-Rising)
1 ½ cups Whole Milk (lukewarm)
Pinch of Salt
For Topping:
Powdered Sugar (for dusting)
Thin Lemon Slices (for baking on top, as seen in image)
Instructions:
Prep: Preheat oven to 325°F (160°C). Lightly grease a 9x13 inch (or slightly smaller oval) baking dish.
Cream Butter & Sugar: In a large mixing bowl, beat the softened butter, granulated sugar, and lemon zest until pale and creamy.
Add Yolks: Add the egg yolks one at a time, beating well after each addition. Mix in the flour and salt.
Add Liquids: Slowly pour in the lemon juice and the lukewarm milk while beating on low speed. The batter will be very thin and look curdled—this is normal!
Whip Whites: In a separate clean bowl, whip the egg whites until stiff peaks form.
Fold: Gently fold the egg whites into the thin batter in three batches. Fold just until no large clumps of white remain (don't overmix, you want to keep the air).
Bake: Pour the batter into the prepared baking dish. Gently lay thin lemon slices on top of the batter (they may sink slightly, that's okay).
Water Bath (Optional but recommended): For the creamiest custard layer, place the baking dish inside a larger roasting pan filled with 1 inch of hot water. (You can bake without it for a more rustic texture like the photo).
Time: Bake for 45-55 minutes. The top should be golden brown and puffed (like a soufflé), and the center should have a slight jiggle.
Serve: Let cool for 10 minutes (it will deflate slightly). Dust generously with powdered sugar. Spoon into bowls, ensuring you scoop up the sauce from the bottom.
