Meringue:
• Egg white - 130 g
• Sugar - 180 g
• Pinch of salt
• Pinch of lemon juice
Whisk the egg whites (preferably at room temperature) with salt until light and frothy on the highest speed of the mixer.
Gradually add sugar and lemon juice, and whisk until stiff peaks form.
Pipe the meringue onto a silicone mat using a piping bag and place in a preheated oven at 150°C for 35-40 minutes (depending on the oven).
Jam:
• Berries - 150 g
• Sugar - 30 g
• Pectin - 3 g
Cook the berries in a saucepan.
Mix sugar with pectin and sprinkle over the berries while stirring constantly.
Cook for about 30 seconds and transfer to another container until completely cooled.
Cream:
• Philadelphia - 250 g
• Cream - 100 g
• Sugar - 30 g
Whip all the ingredients with a mixer until smooth and homogeneous.Fill the meringue nests with jam.Top with cream cheese. Garnish with berries.
