Ensure your skillet is mirror clean and shiny. If it is dull from cooking on it and not cleaning it thoroughly to a mirror finish, it won't work as well. You need it mirror shiny for the non-stick layer to ensure a perfect bind. Use barkeepers friend to get it mirror shiny (watch cookware episode).
