🛒 Ingredients
• 5 oz (140g) Cream Cheese (room temperature)
• 2 oz (50g) Unsalted Butter
• 1/3 cup (80ml) Whole Milk
• 5 Large Eggs (Separated into Yolks and Whites)
• 1/2 cup (60g) Cake Flour (or All-Purpose Flour)
• 2 tbsp (20g) Cornstarch
• 1/2 cup (100g) Granulated Sugar
• 1/4 tsp Cream of Tartar (or Lemon Juice)

🔪 Steps
1. *The Melt (ASMR Focus):* In a bowl over a pot of hot water (double boiler), melt the cream cheese, butter, and milk together. Whisk until completely smooth and silky.
2. *The Base:* Remove from heat. Whisk in the egg yolks one by one. Sift in the flour and cornstarch. Mix until no lumps remain.
3. *The Meringue:* In a separate clean bowl, whip the egg whites with cream of tartar. Gradually add sugar while whipping until you reach "Soft Peaks" (the peak flops over slightly). Do not over-whip to stiff peaks or the cake will crack!
4. *The Fold:* Gently fold the meringue into the cheese batter in 3 batches. Use a spatula and be very gentle to keep the air bubbles inside.
