Ingredients:
Brown button mushrooms - 400g
Onion - 1 (around 160g)
Garlic - 3 cloves
Chicken stock cube - 1
Flour - 4tbsp (around 32g)
Butter - 30g
Cooking cream - 200g
Chicken stock - 3.5 cups (around 830g)

Seasonings:
Salt
Black pepper
Dried parsley
Dried oregano (Optional)

Directions:
1. Slice button mushrooms.
2. Finely dice onion and mince garlic.
3. Cook onion and garlic in olive oil. (Takes around 3-5 minutes)
4. Add butter then mushroom slices.
5. Cook until the mushrooms soften. Season with salt and black pepper, dried parsley, dried oregano or any herbs of your choice.
6. Stir in the flour, then add chicken stock and stock cube. Cook for 3-5 minutes.
7. Add cooking cream. Cook until boil.
8. Ladle soup into a ramekin.
9. Place puff pastry overtop, then brush eggwash on top.
10. Bake in a preheated oven at 200°C for 8-10minutes or until golden brown.
11. Serve with some garlic bread on the side.
12. Enjoy!! Merry Christmas!
