Veggie Rice for Any Occasion
Ingredients
• 2 cups long-grain rice
• 4 cups water
Vegetables
• ½ cup bell peppers (diced)
• ½ cup carrots (diced)
• ¼ cup seedless tomatoes (diced)
• ¼ cup green peas
• ¼ cup green beans (chopped)
• ½ cup shallots (chopped)
• 2 cloves garlic (minced)
Seasoning
• 2 tsp coriander powder
• 2 tsp Cajun seasoning
• Salt, to taste
• Black pepper, to taste
• 2½ tsp chicken stock powder (optional)
Other
• ¼ cup cooking oil
Procedure
1. Heat the oil
In a large pot, heat the oil over medium heat. Add the chopped shallots and fry for about 3 minutes, until slightly soft and fragrant.
2. Add vegetables
Add the green beans, peas, tomatoes, bell peppers, and carrots. Stir well, then add the minced garlic. Cook for about 4 minutes, stirring occasionally.
3. Season
Add Cajun seasoning, coriander powder, black pepper, salt, and chicken stock powder (optional ). Mix well to evenly coat the vegetables.
4. Cook the rice
Add the rice and water. Stir, cover, and cook for about 10 minutes, or until the water is absorbed and the rice is tender.
5. Rest and serve
Turn off the heat . Fluff gently and serve on its own or with any stewed or grilled protein of choice.
