Ingredients:
For mint leaves paste;
25 gms - Ginger (chopped)
9 - 10 - Garlic cloves
4 - Green chillies
1 cup - Mint leaves
Handful of coriander stems
For mutton stock and boiling the mutton;
½ Kg - Mutton pieces
Whole garam masalas (bay leaves, cloves, star anise, shahi jeera, etc)
1 Tbsp - Salt
1 Tbsp - Dhaniya powder
220 ml - Water
For biryani;
2 Tbsp - Coconut oil (you may use desi ghee if you prefer a richer taste)
2 Tbsp - Groundnut oil
Whole garam masalas - (bay leaves, cloves, star anise, shahi jeera, etc)
50 gms - Cashewnuts
3 - Onion (medium size)
1 Tbsp - Salt
2 Tbsp - Curd
2 Cups - Basmati rice [ Please note: Use 3 cups of mutton stock + 1 cup for water to cook 2 cups of basmati rice]
1 tbsp - Garam masala
Juice of ½ a lemon
1 Tbsp - Ghee
Handful of coriander leaves
