Cháo lòng is definitely not for everyone, and it takes a food adventurer to try it. It has to be made right, that there is no presence of the strong smell of the organs. I tend not to order this in a restaurant as most of the time I find the innards are not clean right. For me, ginger is key, lots and lots of ginger, with wine and salt and vinegar. The liver is soft and the heart and tongue chewy. You can add others like intestine or kidney. Cooking congee with instant pot also speed up the processs. Having this with Chinese long donut and nouc cham dipping sauce (fish sauce), with green onions and lemongrass & garlic sausage, it's a bowl of comfort, full of flavors and texture - just delicious.

1 cup of milk
1 tsp of baking soda
1 knob of ginger grated
2 tongues
1 heart
2 cups of water
1/2 cup of vinegar
dash of salt
1 tsp of salt
1 large ginger sliced
1 block of pork blood jelly
1 knob of ginger sliced
dash of salt
1 cup of rice
8 cups of water
2 cups of chicken stock
1 stalk of lemongrass
2 tsp of sea salt
2 tsp of chicken
1 inch knob of julienne ginger
3 green onions julienne
fried shallots
1 pkg Chinese long donut
lemon or lime
bean sprouts
red chili and black pepper
