Cooked all day, low n slow, at about 110 celsius.
Hoggett is older than lamb but, younger than mutton with the flavour and texture sitting somewhere between the two.
Low and slow with plenty of seasoning, some garlic and a little fresh rosemary results in meat that literally pulls from the bone.
It is delicious!
Simple, no fuss, tasty food.
