From the way the meat is cooked, to the passion behind it, to the fact that these are often family-run businesses built from pure dedication… this completely surprised me.

In England, it feels like a lot of small, independent places struggle to survive… but seeing someone turn their passion into something like this is genuinely inspiring.

This wasn’t just food to me — this was culture.
