Mini Soft Airy Doughnuts
Ingredients
140 ml milk
5 g instant yeast
3 tablespoons sugar (divided)
400 g all-purpose flour
½ teaspoon salt
2 eggs
Oil (for handling dough and frying)
Extra flour, for light dusting
Method
In a bowl, combine 140 ml milk, 5 g instant yeast, and 1 tablespoon sugar. Mix well and set aside for a few minutes to activate the yeast.
In a separate bowl, add 400 g all-purpose flour, 2 tablespoons sugar, and ½ teaspoon salt. Mix until well combined and set aside.
Add 2 eggs to the yeast mixture and whisk until fully incorporated.
Pour the wet ingredients into the dry ingredients and knead until a soft dough forms, about 4 minutes.
Cover the dough and let it rise in a warm place until doubled in size.
Tip: Place the bowl in a warm oven or microwave (switched off) to speed up the rising process.
Once doubled, punch down the dough and knead again for 5 minutes.
Roll out and shape the dough.
If the dough feels sticky, do not add more flour. Lightly oil your hands, divide the dough into small balls, gently dust with flour, flatten, and make a hole in the centre.
Shape the doughnuts and let them rest for 20 minutes.
Fry until golden and cooked through.
Serve with tea/coffee
