This Cauliflower & Spinach Potato Gnocchi Bake is pure comfort food — creamy, cheesy and loaded with rich sun-dried tomato flavour. All cooked in the air fryer in just 10 minutes. No oven. No fuss. Maximum indulgence.

🔥 Air fryer time: 10 minutes

🥣 Ingredients
• 500 g potato gnocchi (plain or spinach)
• 200 g cauliflower florets
• 250 g baby spinach
• 500 g four-cheese pasta sauce
• 100 g dried tomatoes
– If dry-packed: soak in warm water for 10 minutes, then drain
• 60 g grated Cheddar and 100 g mozzarella
• Sea salt & black pepper
👩🍳 Method
1️. Preheat air fryer to 200°C / 400°F.
2️. Bring a saucepan of water to the boil. Add the gnocchi and cauliflower and boil for 1–2 minutes, or until the gnocchi floats to the surface. Drain well.
3️.Microwave spinach to wilt; drain excess water.
4️.Layer in an air-fryer-safe dish:
– Half the gnocchi, cauliflower, spinach & cheese sauce
– Half the dried tomatoes
– Repeat.
5️.Top with Cheddar, mozzarella; season generously.
6️.Air fry 10 minutes, until golden, bubbling and lightly crisp.
💡 Upgrade: Add crumbled soft blue cheese between layers for next-level richness.
