Thomas S. Moore Chardonnay, Port & Cab Finished Bourbons Reviewed

The latest to get in on the yearly “Limited Release” train is the Barton 1792 Distillery. The Thomas Moore line will be focusing on cask finishes and they plan to have new releases coming down annually for years to come. This inaugural 3 bottle lineup begins with their high rye mash bill bourbon that were aged 5-7 years before being finished in either Chardonnay, Cabernet Sauvignon, or Port casks. The craziest part to me is the reported “extended” finishing lengths. Traditionally, a wine finished bourbon would be aged in those barrels for a few months to maybe a year in a Chardonnay or Cabernet barrel due to the heavy tannins that could be extracted by longer maturations, but these have spent 2-4 years maturing in those casks. According to Barton, the idea is to not only pull the wine flavors, but also the cask essences by leaving them in there for multiple years. As for their pricing, MSRP is $70, but I’ve seen them as high as $100-$125. Here’s their proofs and finishing lengths:
1. Chardonnay Finish Bourbon - 97.9 proof and spent roughly 4 years in the Chardonnay barrels.
2. Cabernet Sauvignon Finish Bourbon – 95.3 proof and spent roughly 2.5 years in the Cab barrels.
3. Port Finish Bourbon – 98.9 Proof and spent roughly 3 years in port casks.
Overall, it seems like a big gamble to leave a bourbon in those casks for the extended lengths, but it does drive my curiosity to see if it paid off.
