Ingredients for 2 servings (4 drumsticks each)
Drumsticks:
1 can (19-20oz ) jackfruit, young green, in brine
3/4 cup veggie broth
1 TB chickpea flour mixed with 2TB of water
1/4 cup vital wheat gluten
1 tsp nutritional yeast
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp liquid smoke
8 sheets of round rice paper
4 popsicle sticks (soaked in water) OR 4 cinnamon sticks (if you don’t mind a slight cinnamon flavor)
Marinade for the drumsticks:
2 TB oil
2 TB ketchup
1/2 TB maple syrup
1/4 tsp garlic powder
1/4 tsp chilli powder
1/4 tsp paprika
1/2 tsp salt
Directions:
Drumsticks:
Rinse the jackfruit. Cut off the hard edges of the jackfruit flesh. Squeeze the jackfruit flesh, so the brine comes out.
Bring the veggie broth to a boil in a large pan. Add the jackfruit and let it simmer for about 15 minutes, halfway mash jackfruit with a fork. Cook until the jackfruit has fallen apart into streaks and/or all the broth is absorbed.
Turn off the stove and let jackfruit cool off. Use two forks to shred jackfruit into streaks, if necessary and take out any seeds or hard parts still left in the jackfruit.
Mix the VWG with the nutritional yeast, salt and onion powder.
Stir the liquid smoke and the chickpea flour batter into the jackfruit.
Gradually sprinkle and knead the VWG mixture into the jackfruit, about 1-2 minutes.
Preheat the oven to 390°F
Rinse a clean kitchen towel with cold water and spread it on a flat surface.
Fill a large bowl with cold water. Place two sheets of rice paper on top of each other and hold them in the water for about a 1-2 minutes, until the rice paper becomes soft.
Spread the rice paper on the wet towel. Use a pair of scissors to cut out a triangle piece (Ms. Pacman shape).
Take a popsicle stick and about 1/4 of the jackfruit dough and form a drumstick around the stick. Don’t cover the entire stick, let the stick stick out of the dough.
Wrap the wet rice paper around the drumstick to create its “skin”.
Stir together all ingredients for the marinade. Generously brush the drumsticks with the marinade on each side.
Place a cookie rack on top of a baking tray, generously spray with oil. Place the drumsticks on top of the rack and place the tray in the oven on the middle rack and bake for 30 minutes. Turn the drumsticks and bake for another 20-30 minutes until the desired color of the skin is achieved & your vegan drumsticks are nicely crisp.
