OYSTERS
The quantity is up to you, but you'll have enough mignonette and creme fraiche for at least four dozen oysters. My favorite type is a Rappahannok River Olde Salt oyster from Virginia. They are brinier than most other varieties and stand up well to the assertive flavor of a mignonette. Have no fear though...any variety that you choose will be delicious!
BLUEBERRY MIGNONETTE (makes about 2 cups)
Fresh Blueberries 2 oz. or 1/2 cup (heaping)
Rice Wine Vinegar 6 oz. or 3/4 cup
Shallot 2 1/2 oz. or 1/2 cup
Sea Salt 1/2 tsp
Fresh Ground Black Pepper to taste
GINGER CREME FRAICHE (makes about 1/2 cup)
Fresh Ginger 1 tbsp
Creme Fraiche 4 oz.
