Warmer months are coming and it's the perfect time for nice, fresh salads! This recipe from Hello Fresh New Zealand gives you exactly that! So easy to make too.
INGREDIENTS:
Skinless chicken breast
Red onion
Courgette
Pumpkin
Garlic
Ginger
Mayonnaise
Cucumber
Mixed salad leaves
Roasted Peanuts
Oil
Soy sauce
Lemon juice/rice wine vinegar
Honey
METHOD:
1. Preheat the oven to 200-220 degrees Celsius fan-forced.
2. Cut the red onion into wedges and slice the courgette into half-moons.
3. Peel and cut the pumpkin into small cubes (if using Hello Fresh, they supply this already peeld and diced)
4. Place the veggies on a lined oven tray, drizzle with olive oil and season with salt and pepper. Toss to coat and spread out evenly. Roast until tender, approximately 20-25 minutes.
5. Finely grate the garlic and ginger.
6. Slice through the chicken breast horizontally to make two thin steaks.
7. In a small bowl, combine the garlic, ginger, soy sauce and honey.
8. Cook the chicken until cooked through inside, reduce the heat then add the honey-soy sauce and simmer until reduced slightly.
9.Combine the mayonnaise and small amount of water in a small bowl.
10. Roughly chop the cucumber.
11. In a separate bowl, combine a little bit of oil, lemon juice or rice wine vinegar, salt and pepper (this is your salad dressing).
12. Combine the mixed salad leaves, cucumber and roasted veggies. Add the dressing and toss.
13. Plate up and garnish with the roasted peanuts before serving!
