Hearty Moroccan harira soup: A complete meal in Ramadan
Ingredients: (8 bols)
1 pound beef meat cut into small pieces
1 bunch flat parsley
1 bunch celintro
3 stems celery and some celery leaves
1/2 cup tomato paste
2 1/2 pounds fresh tomatoes
1 big onion
1 cup all-purpose flour
2tbp carawy ground
2tbp ginger ground
2tbp turmec
1tbp black pepper ground
2tbp salt
2tbsp Moroccan smen (fermented butter) or 2tbp vegetable oil (if u add oil, add it at the very beginning when u add meat)
3 cups canned chichpeas
1/2 cup yellow lentils
Recipe:
In a blender, mix onion, tomatoes, herbs, celery
In a pan, add meat cubes, add the mixture of tomatoes, etc, add all spices except caraway. Add 1 liter of boiling water. Cook until the meat is tender
Add chopped celery, chickpeans, tomato paste & lentils. leave it to boit for 8min.
Mix 1 cup flour, 3tbp celery & celintro cut very small, 1 cup cold water & carawy (flour quantity depends on how thick u want u r soup. This harira is medium thick)
Add flour as in the video, add smen or some oil. Keep whisking and watch u r soup. U don't want the flour to stick in the bottom.
Cook and whisk for 20 min until u see like a red crust on the top of edges. Turn off the flame, add some chopped celintro, it adds nice flavor. If u r soup is very thick, add some boiling water
