Autolyse:
1000g Flour W340
500ml Water
2g Fresh Yeast
Mix 3 min & rest 2h@ RT
24h @ 12 degrees c.
Refresh with:
250ml Water
1g fresh Yeast
30g Salt
Mix until smooth
15min @ Roomtemperature
Make the Dough Ball
24h @ fridge
Take out 2 h before use @ RT.
Bake at your favorite temp
Hydration: 75%
Fermentation style: Cold & slow
Flour strength: W340
Ideal for: Aromatic & Soft crusts
