Chewy Almond Flour Chocolate Chip Cookies
Gluten-free, soft, gooey chocolate chips
Ingredients (makes almost 12 cookies)
2 cups (200 g) blanched almond flour
½ tsp baking soda
¼ tsp salt
⅓ cup (75 g) coconut oil or unsalted butter, melted & cooled slightly
70 g brown sugar
1–2 tbsp finely shredded coconut (for flavor & optional topping)
2 tbsp maple syrup or honey
1 large egg (room temperature)
1½ tsp vanilla extract
½–¾ cup chocolate chips
Optional: pinch of flaky sea salt for topping
Instructions
1. Preheat Oven: 350 °F (175 °C). Line a baking sheet with parchment paper.
2. Mix Dry Ingredients: In a medium bowl, whisk almond flour, baking soda, salt, and shredded coconut.
3. Mix Wet Ingredients: In a separate bowl, whisk melted coconut oil, brown sugar, maple syrup, egg, and vanilla until smooth.
4. Combine: Stir dry ingredients into wet until a soft dough forms. Fold in chocolate chips.
5. Scoop Dough: Form 1½-inch balls and place on the baking sheet (2 inches apart). Press tops lightly.
6. Bake: 9–11 minutes, until edges are golden, but centers still look soft.
7. Cool: Let cookies cool on the baking sheet 5 minutes before transferring to a wire rack. Cookies firm up as they cool.
8. Optional Finish: Sprinkle a few extra shredded coconut flakes or a pinch of sea salt on top before serving.
