BEEF ENCHILADAS
INGREDIENTS
1 pound lean ground beef
1/2 onion, minced
1 taco “seasoning pack” or
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon coriander powder
1 teaspoon salt
2 10-ounce cans red enchilada sauce
2 cups cheese, shredded
1/2 cup vegetable oil
8 flour tortillas
Directions
1. Heat a skillet on medium high heat until hot. Add ground beef and onions. Cook approximately 5-6 minutes or until beef is cooked through and onions are tender. Drain excess oil.
2. Add taco seasoning and 1/2 cup of enchilada sauce to ground beef. Simmer on low heat for 5 minutes. Remove from heat and add 1/2 cup of cheese. Set aside.
3. Heat 1/2 cup of oil in a medium sized skillet on medium high heat. Brown flour tortillas in oil on both sides until lightly golden brown. Drain on paper towels.
4. Preheat oven to 350. Fill tortillas with ground beef mixture and place in a 9x13 inch baking dish, seam side down. Pour remaining sauce over enchiladas and top with cheese. Bake for 20 minutes. Allow enchiladas to rest a few minutes before serving.
