Lemon curd is a very rich intense flavor creamy lemon version of jam. Silky, tangy custard that can be used as filling or topping in so many desserts.
If you are a lemon lover or lemon-alcoholic you will be delighted of lemon curd on top of pancakes, ice cream, cheesecake, waffles, inside your buttercream and between layers in cakes or inside cupcakes, tarts, cookies, macarons, or you will love this buttery spread on a toast or scones.

Recipe:
2 eggs + 5 eggs yolks
zest from 2 lemons
1/2 (120ml) cup of lemon juice
3/4 cup + 2 tablespoons (180 g) of granulated sugar
1/3 cup (80g) of cold unsalted butter cut into cubes

Directions:
Place together juice, zest, granulated sugar, and eggs and egg yolks in a 2-quart saucepan. Stir and cook over moderately low heat, whisking constantly, (whisking prevents the egg from curdling) until the curd is thick enough to hold marks of whisk and first bubble appears on the surface, then remove the pan from heat and continue whisking. Add the butter while whisking until all butter has melted.
Pour curd into a mesh strainer to ensure any thicker bits or zest stay out of the curd. Transfer lemon curd to a bowl and chill, its surface covered with plastic wrap, until room temperature, at least 1 hour then transfer into a jar then into the fridge. The curd will continue to thicken as it cools.
