In this video, I made an absolutely delicious hot sauce using the infamous Khang Starr Lemon Starrburst peppers and some pears.
Feel free to follow along with the video and the recipe below, along with my post-recipe corrections.
Ingredients:
50g KSLS Chillies
500g ripe pear, peeled, chopped and cored
100g diced onion
200ml white wine vinegar
1 lemon, juiced
2 cloves of minced garlic
2" stick of ginger, minced
1 tbsp brown sugar
50ml spiced rum
1 tbsp mustard seeds, pretoasted for best flavour
0.5tsp allspice
0.5tsp cinnamon
0.5tsp cumin
Preparation:
Wear gloves to handle the chillies.
Remove the stems from the chillies and chop them roughly.
Peel, core, and chop the pear.
Cooking:
In a saucepan, add a small amount of oil and sauté the chopped onion and garlic until softened and translucent, about 3-4 minutes.
Add the chopped chillies, chopped pear, mustard seeds (if using), and salt. Cook for another 3-4 minutes, stirring occasionally.
Simmering:
Pour in the vinegar and lemon juice. Bring the mixture to a simmer.
Reduce the heat and let it simmer for about 10-15 minutes until the chillies and pear are soft and the flavors meld together. Stir occasionally. Add the rum 5 minutes before the end.
Blending:
Remove the saucepan from the heat and let the mixture cool slightly.
Transfer the mixture to a blender or use an immersion blender to puree the sauce until smooth.
Adjusting Flavor:
Taste the sauce. If it's too acidic, add honey or sugar to balance the flavor. If it's too thick, add a bit more vinegar or water to reach your desired consistency.
Bottling:
Pour the hot sauce into sterilized bottles or jars. Allow it to cool to room temperature before sealing.
Store in the refrigerator for up to a month.
