Garlic Butter Chicken:
My style.
Super simple, super tasty dish. Soft chicken lots of garlic and butter makes it mouth watering delectable dish.
Ingredients and method:
1. Marinate 500 gms chicken pieces with 1 Tspoon salt, 1 Tspoon black pepper powder, half Tspoon turmeric powder, 1 Tspoon red chilli powder and squeeze half lime juice. Mix well and keep aside for 1 hour or more.
2. Prepare masala powder with 1 tablespoon sabut Dhanya (coriander seeds), 1 Tspoon jeera (cumin seeds), 1 Tspoon black pepper corns, 10 laungs (cloves), 4 green cardamoms (Elaichi), 1 black cardamom (badi Elaichi), some cinnamon (dalchini) pieces, 1 star anise (badiyan). Sauté all for 2-3 minutes on low flame. Add 2 Kashmiri red chillies whole. Roast for 2 minutes more.
3. Transfer to a bowl and let it cool down. Grind to powder.
4. chop 150 gms onions.
5. Chop 1 medium tomato
6. Peel 50 gms garlic.
7. In a frypan heat 4 tablespoon butter.
8. When melted add fried chicken pieces and fry for 7-8 minutes, frequently flipping till burnt spots are visible.
9. Turn off the gas and Take out in a plate.
10. In the same frypan add some more butter.
11. When melted, add chopped garlic. Keep some for Tadka. When golden, add 150 gms chopped onion.
12. When pinkish golden add a little water. When water is evaporated, again add some water. Do this process 3-4 times. It will stop caramelization of onion and it will be tendered very nicely.
13. Add 4 Slitted green chillies .
14. Add 1 tablespoon ginger garlic paste. Sauté for 2 minutes.
15. Add chopped tomato.
16. Add salt to taste. Remember we added salt while marinating chicken.
17. Sauté till tomatoes are soft.
18. Add fried chicken pieces.
19. Roast for 3 minutes.
20. Add 1 Tspoon red chilli powder and 1 Tspoon Kashmiri red chilli powder.
21. Add 1 tablespoon meat masala powder.
22. Add a little water so that masalas don’t burn.
23. Roast for 5 minutes.
24. Add masala powder which we prepared earlier.
25. Add a little water. Mix well and sauté.
26. Add 1 cup water. Cook on high flame for 3-4 minutes.
27. Cover the lid and cook for 10 minutes on low flame.
28. pour water on lid.
29. Again cook for 15-20 minutes on low flame or till chicken is tender.
30. When chicken is tender, add a little sugar.
31. Sprinkle chopped coriander leaves (kothmil)
32. Cover the lid and simmer for 10 minutes on low flame.
33. After simmering, transfer to a serving bowl.
34. Now give Tadka (baghar).
35. In a metal katori heat a few drops of oil and add 2 Tspoon ghee (clarified butter). When ghee is melted add chopped garlic.
36. When golden add to chicken.
37. Our Garlic Butter Chicken is ready. This is my style chicken. Savour the taste with roti, naan or steamed rice.
