INGREDIENTS FOR 2ND MUTTON MARINADE:-
Whole Yogurt
- 3/4cup/213gms
Khoya/Milk Solids-
7tbsp/90gms
Whole Milk
- 3/4cup/180ml
Nutmeg Powder
- 1.5tsp/3gms
Kasundi/Asian Mustard Sauce
- 1tbsp/15gms
INGREDIENTS FOR MUTTON GRAVY/STEW:-
Mustard Oil-
3/4cup/187gms
Ghee/Clarified Butter
- 1tbsp/15gms
Bay Leaves
7-8
Cinnamon Sticks

Green Cardamoms

Onion Slices

Roasted Peanut Paste-

Mustard Oil

Mutton Glassy is a traditional old Dhaka delicacy that traces back to the colonial era. Tender, succulent and creamy, when the mutton is marinated in aromatic spices, cooked over a low flame in a gorgeous rich brown stock, milk and milk solids, resulting in pronounced flavor & deeper color.
Marinate the mutton in 2-step process to achieve the utmost taste & flavor.
The 1st marination process seasons the meat very well.
Let the meat come to room temperature 1st. The 2nd marination ensures that the meat remains creamy & moist during the cooking.
Use mustard oil to get the authentic taste of the dish.
To make the base of the curry, cut the onions into thin slices & lightly caramelize them.
Use curry-cut meat pieces for this recipe.
There is no need to braise the meat to make this dish. Stew the mutton over a low flame, resulting in tender & juicy fall-off the bone meat.
Mix the roasted nut paste with milk to enrich the dish.
Increase the number of chillies if you like the food to be spicy.
Maintain low heat to cook the meat.
