Bhuna Chicken Masala
Ingredients
MARINADE:
Chicken 1 kg (boneless or with bones)
Yogurt 1 cup
Paprika powder 1 tsp
Red chili powder to taste
Salt to taste
Coriander powder 2 tsp
Garam masala 1 tspOil 4 t sp
Ginger paste 1 tbsp
Garlic pasteb1 tbsp
Lemon juice 2 tbsp
Dry Roast Masala
Cumin seeds 1 tsp
Cinnamon sticks 2
Cloves 2
Green cardamoms 3
Fennel seeds (saunf) 1 tsp
Bay leaf 1
Dry red chili 1-2
Oil 4-5 tbsp
Onions 2, medium
Tomatoes 3 medium
Dried Fenugreek leaves 1 tsp
Preparation:
In a bowl, add yogurt and all other ingredients mentioned under "Marinade". Marinate for atleast 2-3 hours or overnight.
In a cooking pot add spices mentioned under "Dry Roast Masala" and dry roast on low flame until aromatic.
Now add oil and chopped onions. Saute until soft.
Add chopped tomatoes, cover and cook on medium low until soft.
Allow to cool down and take out the whole spices that you do not like to grind, like bay leaves, cinnamon sticks etc.
and blend into smooth paste by adding some water.
Pour this blended masala back to the pot and roast until smells like "BHUNNA Masala".
Add marinated chicken, cover and cook until the chicken is ready to eat (20-30 minutes). Add water to thin out the gravy if needed.
Lastly add fenugreek and let the curry simmer for 5 minutes.
Serve immediately with roti or rice. Enjoy!
