Koishi is the judge of the Bizarre Cooking Competition and the boss of DLC2. To challenge Koishi, you must max out the affinity for all 6 DLC2 characters (so it's the 3 NPCs in Former Hell and the 3 in the Palace of the Earth Spirits). Each NPC will give you a Recommendation Letter that you can then give to Rin. Koishi can be seen in both of the DLC2 locations prior to this contest.

This challenge has 3 distinct phases / rounds.

Round 1:
You have to deal with generic customers who won't tell you what they want. I think the game wants you to remember their preferences (you can look them up in the menu and Mystia says in story that she does) but that's not happening, especially with how the laster phases are... Instead, I picked a quick an easy dish, gave it an ingredient that hit a lot of traits (I chose the Truffle) and just brute forced it. You just need 20 satisfied customers (orange = satisfied) so you need to prep at least 20 of those dishes. Don't be afraid to overprep, any excess junk dishes will be extremely helpful in the final phase...

Round 2:
Don't know how else to say this, but this round is a giant pain. I had to relearn new recipes for the entire cast thanks to this phase's Toutetsu style random trait gimmick (had to spend an hour in Excel and everything). Besides the Toutetsu style gimmick, this round isn't too different from the second phase of Yuyuko's challenge.

For this round, you'll want to find recipes with 1 or 2 base ingredients that work for each character. You use 1 of the extra ingredients to hit the random trait and you use the leftovers to hit the character's specific traits. Like Toutetsu, it's possible to get a random trait that will turn a dish into Dark Matter, so be wary of that. It is very important that the recipes you pick hit 100% satisfaction (i.e. pink textboxes), because in this challenge named customers WILL punish you for something that would have only gotten orange normally.

The good news is that once you have gotten over this glorified knowledge check, this is a pretty simple phase. So long as you have the best recipes, and you DON'T do something like prepare a dish or give a character food right as the trait is about to get changed, you should be fine. Also, make SURE you serve the drinks the first. You do NOT want to give Meiling a dish, realize she doesn't have a drink and have her break a table because she received the drink too late...

Round 3:
The final round is an RNG pain just like Toutetsu.

At first, Koishi will summon familiars and hide what dish she wants. These familiars have to be given random dishes and, like the previous round, these dishes also need to satisfy a random trait. You have to act quickly since elements of the UI will disappear over time, though there's also a proper timer in this phase too.

Once the familiars are satisfied, they'll drop clues that will tell you what Koishi wants. When you've given Koishi the dish she wants, you need to quickly feed her more dishes. You have to go through this process three times to win and while it sounds simple this round is much more punishing than the previous one.

Most of my other tips from the previous round applies (give drinks first, pay attention to the random trait timer). There's not much to do about the random dishes, but using the menu to highlight specific dishes will help a lot. You can use the menu to find the specific dish Koishi wants. It's also possible to guess Koishi's dish without knowing all the clues, though I only recommend it if you're desperate (and only if you've already found out what drink Koishi wants).

While things don't sound too bad, RNG can be a big factor in this final section. Like if the AI decides to spawn a bunch of time consuming cooking board dishes, and you only happen to have one cooking board, you're probably screwed. There's always a chance of it happening since the max number of utensils is only 8.
