For the pasta:
1. 1 🥦
2. 1 red 🫑
3. 1 🥕
4. 1 beetroot
5. Leftover or boiled pasta
6. Mung sprouts
7. Black chickpea sprouts (optional)
8. 1 🥒
9. 1 🥄 🧂
10. 1 🥄 black pepper
11. 1 🥄 🌶️ powder
12. 1 🥄 roasted cumin powder
13. Glug of 🫒 oil
For the dressing:
1. Juice of 1 🍋🟩 or 🍋
2. 1 🥄 🧂
3. 2 🥄 black pepper
4. 2 🥄 English mustard
Process:
1. Preheat oven to 200C.
2. Chop 🥦 and red 🫑 into bite sized pieces.
3. On a lined baking tray, toss the 🥦 & 🫑 in 🫒 oil,🧂, pepper, 🌶️ powder, and roasted cumin powder.
4. Bake for 15-20 minutes.
5. Thinly slice the 🥒. Keep aside.
6. Dice beetroot. Keep aside.
7. Peel and shred 🥕. Keep aside.
8. Steam mung and/or sprouted black chickpeas for 10-15 minutes.
9. Combine all ingredients for the dressing in a small container. Mix well & keep aside.
10. To assemble, roughly tear some mixed greens in a bowl.
11. One by one, add all the prepped veggies and sprouts.
12. Add the dressing.
