These muffins are super easy to make in one bowl with just 4 ingredients only! They are naturally sweetend with banana and yet still nicely sweet, moist and flavorful! Here`s what you need......
Healthy 4 Ingredients Oatmeal Banana Muffins
INGREDIENTS (9 muffins)
3 small bananas (300 grams)
4 small eggs (200 grams)
105 grams (1 cup + 1 tbsp) oat flour*
6 grams (1 tsp + 1/2 tsp) baking powder
INSTRUCTIONS
1. Line a muffin tin with 9 cupcake cases. Set aside.
2. Pre-heat the oven on 180C (360F).
3. Take a large bowl. Put the bananas into the bowl. Mash them with a potato masher or fork into a puree.
4. Add the eggs to the banana puree. Stir with the masher or fork until the puree and eggs are mixed well.
5. Add the oat flour. Take a small sieve and sieve the baking powder into the bowl. STir with a spatula, whisk or spoon until all ingredients are fully incorporated into a batter.
6. Take a small cookie- or ice cream scoop. Scoop 1 + 1/2 scoop per muffin to divide the batter evenly over the 9 cupcake cases.
7. Put the muffin tin into the pre-heated oven and bake the muffins 27 minutes on 180C (360F).
8. After 27 minutes, take the tin out of the oven and place it on a rack. Let the muffins cool in the tin and on the rack for 10 minutes.
9. After 10 minutes, take the muffins out of the tin and place them on a rack. Let them cool until lukewarm or completely cooled.

I used certified gluten free oat flour.
