Shortbread Snowball Cookies
Ingredients
2 tbsp caster sugar
115 gms unsalted softened butter
1 cup all purpose flour
1/4 tsp salt
1 tsp vanilla or toffee essence
1 cup chopped walnuts or pecans
Method
In a medium size bowl, blend until smooth the sugar and butter. It should resemble a pale yellow.
*Add in the dry ingredients and mix till nicely incorpoarted.
Add in the chopped walnuts and mix using a spatula.
Refrigerate for an hour or freeze for 20 minutes.
Using an icecream scoop scoop mini balls of dough. Roll between your palms for a smooth shape. Transfer to a parchment lined baking tray.
Again refrigerate for 30 minutes while you pre heat the oven at 180 D C .
Bake for 10 to 14 minutes. Please note that these result in a golden top like other cookies. If you wait for that to happen, your cookies will get burnt.
Once done get it out from the oven, cool slighly on a wire rack.
While still warm coat the cookies in powdered sugar or icing sugar. (Optional)
Best had when warm.
These can be stored for upto a week at room temperature or 3 weeks in the refrigerator.
You can also freeze the cookie dough by covering it with cling wrap and in an airtight container.
