Honey Garlic Roasted Carrots
425° F
2 lbs Carrots - peeled/cut into 2 -3" pieces
5 Tbsp Butter
4 Cloves of Garlic - minced
2 Tbsp Honey
1/4 tsp Salt
1/4 tsp Pepper
Parsley for garnish
Parchment paper or cooking spray in baking sheet
Cut up carrots and set aside.
In small sauce pot, melt butter, add garlic and cook for 2 -3 minutes on low heat, do not let
the garlic brown. Remove from heat and stir in the honey, salt & pepper, mix well. Toss carrots in sauce.
Place on baking sheet. Bake @ 425° for 25 minutes or until fork tender.
Garnish with parsley.
