3–4 fish steaks (catfish, seabass, salmon, monkfish – all work well)
For the Caramel Sauce
3 tbsp sugar
Into dry pan (no oil)
Aromatics
3 cloves garlic, minced
2 small shallot, finely sliced
4 spring onions
Marinade & Sauce
Fish sauce
Oyster sauce
White Pepper
Cooking oil
Red chilli sauce
MSG
To Finish
Fresh spring onions (for garnish)
Optional fresh chilli
To Serve
Steamed jasmine rice
Pickled mustard greens / mixed pickles / any simple veg
