Ingredients
Soaked Urad dal (उड़द दाल ) - 1 cup ( 200 gms)
Kumhra(कुम्हड़ा ) - 500 gms
Asafoetida (हिंग ) - 1 pinch
Ginger (अदरक ) - 1 inch ( grated )
Baking Soda (बेकिंग सोडा ) - Less than 1/4 pinch
Cumin seeds (जीरा ) - 1/2 tsp
Cloves (लौंग ) - 4
Black pepper (काली मिर्च ) - 1/2 tsp ( coarsely grounded)
Cinnamon stick (दालचीनी ) - 1 piece
Whole coriander (साबुत धनिया ) - 2 tsp
Green chili (हरी मिर्च) - 2 ( finely chopped )
Salt (नमक ) - 1/2 tsp ( or to taste)
How to make Rakhiya Vadi :
1. Take some urad dal, washed well and soaked in water for 2 to 3 hours.Remove water and grind the dal.
2. Add asafoetida, grated ginger, 1 tbsp water to it. Mix it. Cover and keep it aside.
3. Take kumhra, remove the soft pulp as well as the skin. Grate the kumhra pieces, then keep in a piece of cloth and tie it. To squeeze of water keep something heavy over cloth.
4. Whisk the dal, add baking soda and whisk again.
5. To check the dal, Pick some out and put it in water, if floats it is ready.
6. Add the grated kumhra to dal and mix well. Cover and keep it over night,and make vadis in the morning.
7. Dal is ready overnight, mix coarsely grinded spices such as, cumin seeds,cloves, black pepper,cinnamon stick, whole coriander. Add salt.
8. Stir the dal, add green chili finely chopped.Mix well. Grease the thalis and your hands with oil.
9. Pinch out the dal and break vadis at distance. Keep the thalis out in sunlight,In 2 to 3 days of sunlight vadis will dry up.
