To make the recipe, simply follow the instructions below:
INGREDIENTS
Parsley Pesto
25 g Parmesan cheese, cut in pieces (2 cm)
25 g fresh flat-leaf parsley, leaves only
25 g pine nuts
1 garlic clove
75 g olive oil, plus extra for storing
½ tsp fine sea salt
Potato Soup
150 g onions, peeled and quartered
25 g unsalted butter
475 g floury potatoes, peeled, cut in pieces (3 cm)
1 vegetable stock cube (for 0.5 l)
500 g water
200 g whole milk
1- 2 tsp fine sea salt
½ tsp ground black pepper
PREPARATION
Parsley Pesto
1. Place Parmesan, parsley, pine nuts, garlic clove, olive oil and salt in mixing bowl then blend 30 sec/speed 6.
2. Transfer to an airtight jar and cover with olive oil. Refrigerate until needed. Clean and dry mixing bowl.
Potato Soup
3. Place onions and butter in mixing bowl then chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
4. Add potatoes, stock cube, water, salt and pepper then cook 10 min/100°C/reverse/speed spoon until potatoes are fully cooked.
5. Add milk then blend 1 min/speed 5-10, increasing speed gradually. Serve drizzled with parsley pesto.
