Blueberry Cottage Cheese Pancakes 🥞
Serves 2; 25 mins
Ingredients
½ cup old-fashioned rolled oats
2 Tbsp organic walnuts, chopped
1 scoop vanilla protein powder
½ cup organic blueberries
1 medium ripe banana
½ tsp vanilla extract
1 tsp baking powder
2 organic pasture raised eggs
¼ cup low fat cottage cheese
Method
1. Add all ingredients to a food processor or high speed blender and blend well until smooth and thoroughly combined.
2. Heat a pan to medium heat and lightly coat with grass fed butter. Gently pour batter in roughly ¼ cup portions and cook until bubbles appear on top. Flip and cook until golden on the bottom.
3. To continue, wipe pan and repeat with more butter and batter. When ready to eat, top with more blueberries, maple syrup and enjoy immediately!
