It is a classic treat for Dragon Boat Festival that falls on the start of summer. I also take you along my running journey and watched the beautiful sunset sky in Penang island. Coconut Palm Syrup Recipe:
400g palm sugar
120ml water
200ml coconut cream
1-2 knots of pandan leaf
Combine palm sugar, water and pandan leaf in a pot and bring to a boil.
When palm sugar is fully dissolved, add coconut cream and switch to low heat. Once coconut palm syrup comes to a brisk simmer, turn off heat immediately. Cool completely, transfer to an air tight container and store chilled in the fridge.
