🥕 Ingredients
• 1.5 kg beef (cut into cubes)
• 200 g smoked bacon
• 1 onion
• 2 carrots
• 200 g small mushrooms
• 200 g pickled onions
• 500 ml red wine
• 500 ml beef stock
• 2 tablespoons tomato paste
• 1 tablespoon butter
• ½ cup flour
• Thyme
• Bay leaf
• Salt and pepper to taste

1. Cut the beef into cubes, coat in flour, and brown in a pot with olive oil.
2. Remove the beef and fry the diced bacon in the same pot.
3. Add chopped onion and cook until soft.
4. Pour in red wine, add thyme and bay leaves, then stir.
5. Add beef stock, cover the pot, and place it in a preheated oven at 180°C (356°F) for 1 hour.
Next:
1. Slice the carrots thickly and fry them in olive oil with a pinch of salt.
2. Add mushrooms and cook until lightly golden, then transfer both to the main pot.
3. In a pan, melt butter, add crushed garlic and tomato paste, sauté briefly, and add to the stew.
4. Stir in the pickled onions, season with salt and pepper, cover again, and bake for another 45–60 minutes until the meat is tender and the sauce is rich.
