We visit the Cheese Boutique in Toronto, the shrine of all things cheese, and speak with Maître Fromager Afrim Pristine about how to assemble an amazing cheese board.
MASTER TIPS DISCUSSED IN THE VIDEO:
1. Offer a variety to satisfy every palate. Contrast:
TYPES OF MILK (cow, sheep, goat);
TEXTURES (soft, semi-soft, semi-hard, firm, fresh, blue-veined, washed-rind, pressed); &
FLAVOURS (from mild to stinky).
2. Serve the cheese at room temperature.
3. Cheese can be intimidating. Eliminate the intimidation factor by:
Labelling the cheeses; and
Offering at least one recognizable/common cheese.
4. Take a world tour. It's so easy to virtually travel the world with cheeses. Try pairing cheeses with wines or beers from their country of origin!
5. Add accompaniments that allow the cheese to shine:
Fruits like grapes, figs, apples, pears, but no berries
Honey, jam, preserves, even a whole grain mustard
Keep the bread simple: Baguette, light crackers, & a gluten-free option
Salty nuts or olives are also great.
If adding charcuterie, don't go too spicy. Stick with prosciutto, simple salami, pâté or terrine
