This is a simple gluten-free and vegan side dish.
Carrot and black bean thoran
Ingredients:
2 c grated carrots
1 c cooked black beans(dry, soaked overnight then cooked in the pressure cooker with 1/4 tsp salt, 1/2 tsp ginger and garlic paste)
1 small piece of ginger
5 cloves garlic
1tsp cumin seeds
2 green chilis
1/2 c grated coconut
1/4 tsp turmeric powder
1/2 tsp mustard seeds
1 tbs olive or coconut oil
1 small sliced onion(or diced)
1 stem curry leaf
Mix grated coconut, ginger, garlic, chilis, and cumin seeds in a blender til it's crushed. Set aside.
Heat frying pan and then add olive oil. Add mustard seeds, wait for it to pop then add the onions and sauté. Add coconut mixture, turmeric powder, and carrots. Mix well. Add salt and rinse the blender to get all the coconut mixture out and add it to the carrot mix. Add one stem of curry lead, stir, cover and cook on low for 10-15 mins til carrots are cooked. Add the cooked black beans, stir and serve! Carrot and black beans thoran ready!
