Revelling in the confidence of a recent win, he's feeling strong. Some might even say cocky. But will his lucky streak continue??? Or should we rename the sloppy Joe a sloppy John?

Ingredients
1 tbsp vegetable oil
300g beef mince
1 red onion
1 red pepper
1½ tbsps tomato puree
1 tbsp cider vinegar
1tsp Dijon mustard
½ tsp brown sugar
½ tsp runny honey
½ tsp chilli powder
400g tin mixed beans (any type of beans can be used)

For the garnish, and to serve
2 red chillies
½ an iceberg lettuce
Large flour tortillas

Method
Heat the oil in a frying pan over a medium/high heat. Add the meat and brown thoroughly – this will improve the final flavour. Cook until any excess moisture has evaporated and the meat is golden brown.

Meanwhile, finely dice the red onion and pepper. Add to the browned meat and cook until softened. Add the tomato puree, cider vinegar, mustard, sugar honey and chilli powder and stir to incorporate. Add the beans, and stir again. Season with salt and freshly ground black pepper. If you prefer your sloppy joe slightly sloppier, add another squeeze of tomato puree and top up with a tablespoon or two of water.

Roughly chop the red chillies and shred the lettuce, and set aside.

Warm the tortillas by placing them, individually, directly over the sloppy joe until pliable.

Add two generous spoonfuls of the sloppy joe to the centre of a tortilla, and top with a handful of lettuce and a few chillies. Fold the two shorter edges into the centre, before folding over one larger sides and tucking in under the filling to create a firm sausage shape. Continue rolling from the same side to finish the wrap. Firmly slice into three, if you wish, and serve.
