To unlock the fight at the Derelict Ship, you need the full 3 pages of the Hempen Jig Ballard. Get it from a chest in the Derelict Ship area itself, from activating a machine in Point Break Cantina (shown in video), buy it from the Collector in Harm's Way.
Once you got it, simply play the song on the piano in the Derelict Ship area to summon the monster. You need to defeat it to fill the Beastiary 100% for a trophy.
