Ingredients
Cinnamon Sugar (used twice)
• ¼ cup granulated sugar
• 1 teaspoon cinnamon
• 1 tablespoon brown sugar (reserve for finishing)
Cookie Dough
• 1 cup (2 sticks) butter, softened
• ¾ cup brown sugar, packed
• ¼ cup granulated sugar
• 1 large egg
• 1 large egg yolk
• 2 teaspoons vanilla extract
• ¼ teaspoon lemon juice
• 2½ cups all-purpose flour
• 1 tablespoon cornstarch
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• 1¼ teaspoons cinnamon
• ¼ teaspoon salt
Silky Vanilla Buttercream
• ½ cup (1 stick) butter, softened
• 1¼ cups powdered sugar
• 2 teaspoons vanilla extract
• 1–3 tablespoons heavy cream (as needed)

Instructions
1️⃣ Prep
Preheat oven to 350°F. Line baking sheets with parchment paper.
Mix granulated sugar and cinnamon together; set aside.
2️⃣ Make the Dough
Cream butter, brown sugar, and granulated sugar until light and fluffy.
Add egg, egg yolk, vanilla, and lemon juice; mix until smooth.
Add flour, cornstarch, baking powder, baking soda, cinnamon, and salt.
Mix just until combined.
3️⃣ Roll & Bake
Scoop dough into 2-tablespoon portions.
Roll each dough ball in the cinnamon sugar mixture, coating completely.
Place on baking sheets about 2 inches apart.
Bake 9–11 minutes, until edges are set and centers remain soft.
Cool 5 minutes on the pan, then transfer to a rack to cool completely.
4️⃣ Silky Buttercream
Beat butter, powdered sugar, vanilla, and 1–2 tablespoons cream until smooth and fluffy.
Add more cream a little at a time until silky and spreadable.
5️⃣ Finish
Frost cooled cookies with the silky vanilla buttercream.
Mix the reserved 1 tablespoon brown sugar into the remaining cinnamon sugar and sprinkle over the frosting.
