This rustic pumpkin pie or galette, is a blend of French and Italian influences, combining the sweet, caramelised flavours of roasted butternut pumpkin with the rich, salty bite of Gorgonzola cheese. The flaky, golden pastry wraps around a creamy, herby pumpkin filling that’s perfectly balanced with the savoury, earthy notes of fresh thyme. The result is a deliciously unique pie that’s easy to make and perfect for any meal. In Australia we call these butternut pumpkins, in USA they are known as Butternut squash.
