Recipe is below:
15 MINUTE CONGEE USING A BLENDER
2 cups cooked rice
6 cups boiling water (or chicken broth)
4 oz. chicken slivered
3 tablespoons green ons chopped
Boil 6 cups water. Use a kettle to speed up time. If using a blender, put rice in the blender. Add 2 cups boiling water. Blend at medium speed for 30 seconds. Blend longer for more smooth congee.
Tranfer mixture into a cooking pot. Add remaining water or chicken stock. Add chicken or your favorite topping at this time. Turn heat to medium to medium high. Congee is ready to eat in 15 minutes. Sometimes rice takes longer to break down. Add 5 or more minutes to the cooking time. Sprinkle chopped green onthe congee just before serving. Enjoy!
Alternate Cooking Method:
If you don't have a blender, you can still make this Chinese congee recipe. Just add the rice directly into the cooking pot if you are not using a blender. Add the 6 cups water. Set heat setting at medium high heat. Add the chicken or your favorite topping. When congee is bubbling, turn heat down to medium. Without the blender, the congee will take longer to break down. Add an extra 10 or more minutes to the cooking time. Serve the congee in a bowl. Add green onions just before serving. Enjoy!
