This no wastage Aloo Gobhi Matar is one of the winters most favourite vegetable recipe. Although it's available around the year but it's main season falls in winters. Aloo Gobhi is a recipe that has gained recognition internationally. And Gobhi fry is popular in Indian weddings. This won't need frying but will taste like shadi wali gobhi. It's a recipe made with Cauliflower Potatoes and Green Peas.
And here is the easy recipe of its making.
Cut Cauliflower into small florets. Wash and soak in Salted Water. 500gm.
Don't waste stems. Chop them and keep aside.
Dice 2 Potatoes. And make 3 Tomato Puree.
Soak 1 inch Ginger Julienne and some Coriander stems in half Lime Juice.
In a Kadhai, smoke 5 tbs of Mustard oil and then reduce flame.
Add crushed 2 Dry Red Chilli, 1 tsp Cumin and 1 tsp Coriander seeds.
Soon after add, 5 long sliced Garlic.
After 5 secs. add 2 chopped Onions. Add 1 spoon Salt.
Increase flame, Saute until light brown.
Add chopped Cauliflower stems along with diced Potatoes.
Saute for 4 mins.
Now add, Cauliflower. Adjust Salt. Saute for 4 mins.
Add 1 tsp Turmeric, 1 tsp Kashmiri Chilli powder and 3 Tomato Puree along with some water.
Stir, await boil in gravy. Reduce flame, Cover & Cook for 4 mins.
Now Uncover, Increase flame, shuffle and evaporate excess moisture.
Once moisture reduces, add 1 tbs Desi Ghee, 1 tbs Garam Masala, 3 Chopped Green Chillies and soaked Ginger Julienne with Coriander stems.
Cook & shuffle for 2 mins.
Finish with Fresh Coriander.
Ready to serve...
