Restaurant-Style Dry-Aged Pork Tenderloin Tonkatsu
I recreated a modern Japanese tonkatsu using dry-aged pork tenderloin, just like you’d find at a specialty tonkatsu restaurant.
The pork is dry-aged for deeper flavor, coated with a potato starch and egg batter for better adhesion, and fried to achieve a crispy exterior with a juicy pink center.
Pink doesn’t mean raw — it’s fully cooked, safe, and incredibly tender.
This is how I make restaurant-quality tonkatsu at home.
