When grilling galbi outdoors a pureed marinade is the absolute best. You get full flavour extraction and an incredibly tender, sweet, savoury, and garlicky rib. But if you try to cook that version indoors, the puree and sugars turn into burnt cement in your grill pan. When you get galbi in a Korean restaurant it tends to be the kind that does not use a puree as marinade as they hate the clean up as much as you and I.
To avoid scrubbing your pan for hours after you cook, the trade off is to shift from a pureed marinade to one that only uses a rough chop and a longer marinade time AND eliminates all sugars. Don't worry, my solve is to create a sweet soy & sesame glaze that you can baste on the ribs at the last minute to instantly caramelize and add a dark sheen to your galbi.
While not as deeply flavoured with onion and garlic, this version is much kinder to your grill, and as long as you have a day or two to marinate, you'll still get extremely flavourful beef that's perfect for lettuce wraps (ssam) or simply eating with rice and banchan.
